Bucatini Carbonara

Ingredients [ serves: 2 ]

  • 6 ounces bucatini, fresh or dry

  • 4 ounces thick cut bacon, sliced

  • 1 tablespoon olive oil

  • 4 garlic cloves, finely chopped

  • 1 cup parmesan, grated

  • 2 large eggs yolks

  • salt & freshly-cracked, coarse black pepper

Directions [ total time: 20 minutes ]

  1. Bring a large pot of lightly salted water to a boil.

  2. Meanwhile, bring a large skillet to high heat and cook bacon until slightly crisp. Remove from heat and set aside on paper towel to drain. Add olive oil and garlic to skillet and sauté for a minute. Turn off heat and set aside.

  3. Add the pasta to pot and cook until al dente. Drain and return to pot. Stir in bacon, garlic/olive oil, and 1/2 cup of parmesan.

  4. Split pasta between two bowls. Top each serving with an unbroken egg yolk, parmesan, and pepper + salt to taste.

  5. Serve immediately. And don't forget to break the yolk!
